Honey-Glazed Fat Peach

A classic Shandong-style sweet dish. Plump peaches (a famed variety from Shandong) are cut into chunks, lightly battered, and deep-fried until golden. They are then drizzled with a honey syrup, giving the dish a glossy amber finish. The result is sweet, fragrant, and refreshingly light.

Honey-Glazed Fat Peach

Ingredients

Fat peach (peeled and cut into irregular chunks) 200 g
Honey 20 g
White sugar (for caramelizing and making sauce) 20 g
Osmanthus sauce 20 g
Peanut oil (for frying and caramelizing sugar) 50 g
Dry flour (to coat peach chunks) to taste
Water (for making sauce) to taste

Instructions

Fry the peaches

Peel the fat peaches and cut into irregular chunks. Coat evenly with dry flour, then fry in oil heated to about 60% hot (around 150°C) until fully cooked and golden brown. Remove and set aside.

Prepare the sauce

In a wok, add peanut oil and white sugar. Stir-fry over medium heat until the sugar turns red, then add water, the remaining white sugar, and honey. Simmer for 2 minutes.

Finish the dish

Add the fried peach chunks and the osmanthus sauce to the wok. Continue to simmer until the sauce thickens and coats the peaches, then transfer to a plate and serve.
