Honey Glazed Sweet Potatoes
Glossy and tender, this sweet dish is made by braising yellow-fleshed taro with rock sugar and honey.

Sweet potatoes (yellow-fleshed, peeled, cut into olive-shaped blocks with pointed ends)

Rock sugar

Honey
35g
Water (for cooking the syrup)

Bamboo mat (to line the bottom of the clay pot)

Step 1
Peel the yellow-fleshed sweet potatoes, cut them into olive-shaped blocks with pointed ends, wash, blanch in boiling water, then rinse with cold water.

Line the bottom of a clay pot with a bamboo mat (to prevent the sweet potatoes from sticking), add water and rock sugar, simmer until dissolved, then add the sweet potatoes and honey, bring to a boil, and skim off any foam.

Transfer to low heat and simmer for about one hour, keeping it at a gentle boil. When the sauce becomes thick and sticky, gently scoop out the sweet potatoes with a ladle, arrange them on a plate in a flower shape, and drizzle the original sauce over them before serving.
