Honey Three-Cuts (Mi San Dao)

Ingredients

Standard-flour leavened dough 2500 g
Dry flour 750 g
Maltose (for dough) 750 g
Alkali 50 g
Vegetable oil about 1500 g
Maltose (for dipping) 2500 g

Instructions

1

Mixing the dough

Ferment the dough until well-developed, add alkali, and knead into a smooth dough. Separately, combine 750 g dry flour with 750 g maltose and knead into a maltose dough.

2

Shaping

Divide the leavened dough into two portions and roll each into a flat sheet; roll the maltose dough into a flat sheet as well. Stack two leavened dough sheets with one maltose sheet in between to form three layers, then cut into small blocks and make three vertical cuts that stay connected at the top.

3

Frying and coating with maltose

Heat the oil to medium-hot (about 60% of full temperature), lower the raw three-cut pieces in and fry until they float to the surface, then remove. Dip the fried pieces in the maltose pot to coat, take them out, and let them cool completely.
