Hot and Sour Mussels
A Zhejiang-style seafood home dish featuring quickly stir-fried green oysters drizzled with a hot and sour garlic sauce — fresh, tangy, spicy, and appetizing.
Ingredients
Fresh mussels (scrubbed clean and drained)

Garlic (peeled and smashed)

Aromatic vinegar (for garlic chili sauce)

Red chili pepper (chopped, for garlic chili sauce)

Light soy sauce (for garlic chili sauce)

White pepper (for garlic chili sauce)

Step 1
Scrub the mussels clean and drain them well.

Peel and smash the garlic.

Heat the oil, saute the garlic until fragrant, then add the mussels. Stir-fry over high heat until the shells open, then remove and discard the empty half-shells. Reserve 2 tablespoons of the cooking liquid.

Reheat the wok with a little oil, pour in the mixed sour and spicy sauce along with the 2 tablespoons of reserved cooking liquid. When it just begins to simmer, add the mussels, turn off the heat, toss quickly to coat, plate, and garnish with cilantro.
