Hot and Sour Shredded Potatoes
- Wash and peel the potatoes.
- Cut into shreds, rinse off the starch, drain well, and set aside.

- Add an appropriate amount of salt and chicken essence, plus one spoon of light soy sauce.
- Add one spoon of oyster sauce and one spoon of vinegar.
- Stir-fry until evenly combined, add scallion segments, give it a quick toss, and it's done.
