Huizhou Hairy Tofu

A classic traditional Huizhou dish, made by pan-frying fermented hairy tofu before braising it; it has a golden, wrinkled exterior and a fresh, mellow, refreshing flavor.

Huizhou Hairy Tofu

Ingredients

Hairy tofu (each piece cut into 3 small pieces) 10 (about 500 g)
Chopped scallion 5 g
Minced ginger 5 g
Soy sauce 25 g
Salt 2 g
Sugar 5 g
MSG 1 g
Meat broth 100 g
Peanut oil 100 g

Cut into pieces

Cut each piece of hairy tofu into 3 small pieces.

Pan-fry and braise

Place a wok over high heat, pour in the peanut oil and heat until it reaches about 70% hot. Add the hairy tofu and pan-fry until both sides turn yellow and the skin becomes wrinkled. Add the chopped scallion, minced ginger, MSG, sugar, salt, meat broth, and soy sauce, then braise for 2 minutes. Toss a few times, transfer to a plate, and serve.
