Extract the spinach juice
Wash the spinach thoroughly under cold water. Remove any tough stems. Roughly chop the leaves and add to a blender. Blend until you have a smooth, vibrant green juice. You should have about 150ml of juice.
Make the batter
Crack the eggs into a large mixing bowl and whisk until frothy. Pour in the spinach juice and mix well. Gradually add the flour while stirring to avoid lumps. The batter should be thicker than pancake batter but still pourable—similar to the consistency of heavy cream. Fold in the chopped green onions and black sesame seeds. Season with salt to taste.
Cook the pancakes
Heat a non-stick skillet or griddle over medium heat. Lightly grease with a thin layer of oil. Pour about 2 tablespoons of batter for each pancake, spreading it slightly into a round shape. Cook for 2-3 minutes until the bottom is golden and small bubbles form on the surface. Flip carefully and cook another 2 minutes until cooked through. Repeat with remaining batter.
Serve warm
Stack the cooked pancakes on a plate. They can be enjoyed plain or with your favorite dipping sauce such as soy sauce, sweet chili sauce, or a simple vinegar-soy mixture.
