Jalapeño Cheddar Flatbread

Ingredients

milk 3/4 cup (1.5lb) / 1 cup (2lb)
olive oil or vegetable oil 2 tbsp (1.5lb) / 3 tbsp (2lb)
bread flour 3 cup (1.5lb) / 4 cup (2lb)
sugar 2 tsp (1.5lb) / 1 tbsp (2lb)
fresh jalapeño peppers, seeded and chopped 1 (small) (1.5lb) / 1 (medium) (2lb)
salt 3/4 tsp (1.5lb) / 1 tsp (2lb)
active dry yeast or bread machine yeast 1 tsp (1.5lb) / 1 1/4 tsp (2lb)
cheddar cheese, chopped 1/2 cup (1.5lb) / 2/3 cup (2lb)

Dough Preparation

Select the recipe size. Add all ingredients except the cheddar cheese to the bread machine according to the manufacturer's instructions. Select the "Dough" cycle. When the cycle ends, remove the dough, deflate it, cover, and let rest for 10 minutes.

Shaping

Grease a baking sheet. Divide the 1.5 lb dough into 3 portions and the 2 lb dough into 4 portions. On a floured surface, pat or roll each portion into a circle about 7 inches in diameter. Transfer to the baking sheet and poke holes all over the surface with your fingertips. Cover and let rise in a warm place for 30 minutes.

Baking

Sprinkle the cheddar cheese evenly over the surface of the dough. Bake in a 400°F (about 200°C) oven for about 20 minutes until the edges are golden. Cut into pieces and serve warm or cold.
