Key Lime Pie

Key Lime Pie

Ingredients

large egg yolks 5
sweetened condensed milk 1 can (14 oz)
lime zest 1 tbsp
fresh-squeezed lime juice 1/2 cup
graham cracker crumbs 1-1/2 cup
sugar 2 tbsp
melted butter 4 tbsp
whipped cream (for topping) to taste
lime slices (for garnish) to taste

Make the lime filling

Preheat oven to 325°F. In a heavy-bottomed saucepan, mix egg yolks, sweetened condensed milk, lime zest, and lime juice. Heat over low heat, stirring constantly until the mixture thickens or comes to a boil, about 10 minutes. Pour into a greased pie dish. Bake for 25 minutes. Let cool.

Make the crust

Mix graham cracker crumbs, sugar, and butter. Stir until evenly combined and set aside. Pour the cooled lime filling into a large sealable bag and cut off one corner.

Assemble

First press 1 to 2 tablespoons of the crumb mixture into the bottom of a push-pop container. Squeeze a ring of lime filling on top of the graham cracker crumb layer. Repeat layering until full. Top with whipped cream and garnish with lime slices. Refrigerate until ready to serve.
