Korean Spicy Mixed Noodles with Shrimp

Ingredients

fresh noodles 200g
shrimp 150g, peeled and deveined
onion 1 medium, sliced
green bell pepper 1, sliced
kimchi 100g, chopped
Korean gochujang 3 tablespoons
egg 1 large
vegetable oil 2 tablespoons
water 1/4 cup to dilute sauce
sesame seeds for garnish
green onions 2 stalks, sliced

Prepare the ingredients

Slice the onion and green bell pepper into thin strips. Peel and devein the shrimp if needed. Chop the kimchi into bite-sized pieces. Mix the gochujang with water in a small bowl until smooth.

Cook the noodles

Bring a large pot of water to boil. Add the fresh noodles and cook according to package directions, usually 3-4 minutes. Drain well and divide between two serving bowls.

Stir-fry the protein and vegetables

Heat oil in a large wok or skillet over medium-high heat. Add the shrimp and stir-fry for 2 minutes until pink. Add the onion and green pepper, cook for 2-3 minutes until slightly softened.

Add kimchi and sauce

Stir in the chopped kimchi and cook for another minute. Push the vegetable mixture to one side of the pan. Pour the diluted gochujang sauce into the empty space and let it sizzle for 30 seconds, then toss everything together.

Finish with egg and serve

Create a small well in the pan and crack in the egg. Let it set for a moment, then gently scramble it through the vegetables. Spoon the hot topping over the prepared noodles. Garnish with sesame seeds and sliced green onions. Serve immediately while hot.
