Step 1
Use a special crinkle-cut knife to cut the potatoes into thick slices, then cut into strips. If you really don't have one, you can also cut them into long strips.
Step 2
Heat plenty of oil in the pot, add the potato strips and fry until cooked, then remove. If you prefer them crispier, you can remove them shortly after they are just cooked through.
Step 3
According to your taste, add garlic water, chili oil, chopped millet chilies, sugar, vinegar, pepper powder, salt, dry chili powder, chicken essence, and chopped green onions in sequence for seasoning, then mix well and serve.
