Lantern Shadow Sweet Potato Slices

Ingredients

Red-heart sweet potato (washed, cut into rectangular pieces, then sliced crosswise into 1mm thick slices) to taste
Raw cooking oil (oil used in frying) to taste
Fine salt (used for brine soaking) 3 g
White sugar (for mixing the sauce) to taste
Alum (mixed with 90 g water) 3 g
Chili oil (for mixing the sauce) to taste

Instructions

Slice and Soak

Wash the red-heart sweet potato, cut it into rectangular pieces, then slice crosswise into 1 mm thick slices. Soak the slices in water mixed with 3 g alum and 90 g water for 30 minutes, then transfer them to a brine made with 3 g fine salt and 225 g water and soak for another 30 minutes. Remove the slices and let the surface moisture dry off.

Deep Fry

Place a wok over the heat and add oil. Heat the oil until it reaches about 60% hot, then add the sweet potato slices and fry until they turn brownish-yellow and the moisture has evaporated. Remove the slices, drain off excess oil, and arrange them on a serving plate.

Season and Serve

Take a small bowl and combine the chili oil, fine salt, MSG, and white sugar to make a sauce. Drizzle the sauce over the fried sweet potato slices on the plate and serve immediately.
