Twice-Baked Potatoes

Ingredients

russet potatoes 6 medium
sweet potatoes 6 medium
sour cream (divided) 2/3 cup
milk 1/3 cup
shredded cheddar cheese 3/4 cup
minced chives (divided) 4 tablespoons
salt (divided) 1-1/2 teaspoons

Bake potatoes

Pierce the sweet potatoes and russet potatoes all over with a fork. Bake at 400°F for 60–70 minutes until tender. Set the sweet potatoes aside.

Prepare russet filling

Cut off the top third of each russet potato; scoop out the flesh, keeping the skins intact. Place the flesh in a bowl; add 1/3 cup sour cream, milk, cheese, 2 tablespoons chives, and 3/4 teaspoon salt, and mash until smooth. Set aside.

Prepare sweet filling

Cut off the tip of each sweet potato; scoop out the flesh, keeping the skins intact. Mash the flesh with the remaining sour cream, chives, and salt. Fill each potato skin halfway with the sweet potato mixture, then spoon the russet filling into the other half.

Bake again

Arrange the filled potatoes on a baking sheet. Bake at 350°F for 15–20 minutes until heated through.
