Lime Soufflé
Bring the milk, powdered sugar, and flour batter to a boil, then stir in lime juice and egg yolks. Fold in the egg whites, then bake.

sugar (65g for the batter, 1 tbsp for whipping the egg whites)

Mix the dry ingredients
Mix the 65g sugar, flour, and cornstarch together.

Cook the milk base
Pour the dry mixture into the milk, stirring continuously, and bring to a boil until thickened.

Add the lime juice
Add the lime juice and bring to a boil once more.

Add the egg yolks
Add the egg yolks one at a time, mixing well after each addition. Remove from the heat and stir in the butter cubes.

Add lime zest and egg whites
Fold the lime zest into the base batter. Whip the egg whites to stiff peaks, then gently fold them in in batches.

Fill the dish and bake
Scoop the batter into a baking dish lined with crêpes, shape it neatly, and bake in a 180°C oven for about 12 minutes.
