Live Fish with Goji Berries
The crucian carp is blanched, then braised together with goji berries and milk broth until the flesh turns tender and the soup becomes milky white. In traditional Chinese dietary practice, the dish is regarded as warming to the middle jiao and replenishing qi.

Preparing Ingredients
Remove the fins, gills, and scales from the crucian carp; cut open the belly to remove the innards; blanch briefly in boiling water; wash again with cold water. Make cross-hatch scoring on the fish. Wash the cilantro and cut into segments. Cut part of the scallions into shreds and a small amount into flower shapes.
Simmering the Broth
Heat the wok, then add in sequence lard, clear broth, milk broth, minced ginger, scallion flowers, white pepper, MSG, cooking wine, and salt. Simmer into a seasoned broth.
Parboiling the Fish
Meanwhile, bring water to a boil in a separate pot, add the crucian carp and boil for about 4 minutes (to remove the fishy odor), then lift out and transfer into the broth pot.
Stewing and Seasoning
Wash the goji berries and add them to the pot. First bring to a boil over high heat, then shift to gentle heat and stew for 20 minutes. Add scallion shreds, cilantro, vinegar, and sesame oil to season, and the dish is ready to serve.
