White Fungus Soup
After rehydrating the dried snow fungus, simmer it with rock sugar and water until thick and gelatinous.

Soaking
Soak the dried white fungus in warm water until softened, rinse well, and tear into small pieces.

Simmering
Add 1500 ml of water to a pot, add the white fungus, bring to a boil over high heat, then reduce to low heat and simmer until the white fungus is tender and soft.

Sweetening
Add 150 g of rock sugar and continue cooking until the sugar dissolves and the soup becomes thick and viscous.
