Pig Lung and Pear Soup

Ingredients

Pig lung (attach the trachea to a faucet, flush with water while gently patting, scrub vigorously, drain dirty water from the lungs, repeat several times, then break the lung membrane, wash inside and out thoroughly, cut into chunks, blanch) 1
Pear (peeled, cored, cut into small pieces) to taste
Southern and northern apricot kernels (soaked until soft, peeled, crushed) to taste
Honey dates (washed) 2
Dried fig (washed) 50 g
Ginger 2 slices

Prepare pig lung

Attach the trachea connected to the pig lung to a faucet, flush with water while gently patting the pig lung, scrub vigorously, drain the dirty water from the lungs, repeat the scrubbing and washing several times, then break the lung membrane, wash the inside and outside thoroughly, cut into chunks, and blanch in a pot.

Prepare ingredients

Peel and core the pears, cut into small pieces; soak the southern and northern apricot kernels until soft, peel and crush them; wash the honey dates and dried figs thoroughly.

Simmer soup

Place all ingredients into a clay pot, add clean water, bring to a rolling boil over high heat, then reduce to low heat and simmer slowly for 1 hour, season with salt to taste before serving.
