Ingredients

leavened dough (alkalized properly) 225 g
white sugar (kneaded into the leavened dough) 25 g
date paste filling (divided into 15 portions) 100 g
cilantro leaves (attached to the lower part of the longevity peach bun) a pinch

Instructions

1

Prepare the Dough

Alkalize the leavened dough properly, add white sugar and knead until evenly combined. Let the dough rest for 10 minutes, then divide it into 15 equal portions. Roll each portion into a flat round shape, then roll out into a circular wrapper.

2

Wrap and Steam

Divide the date paste filling into 15 equal portions. Wrap each portion inside a circular dough wrapper, then knead into a cone shape. Form a pointed peach tip at the top of each cone. Use a bamboo scraper to press a vertical indentation along the body of each bun. Attach two cilantro leaves to the lower part of each longevity peach bun. Let rest for 10 minutes, then place in a steamer and steam for 8 minutes. Remove from the steamer and dab a small amount of red food coloring on the tip of each peach to finish.
