Lotus Root and Pork Rib Soup
Pork ribs simmered with lotus root yield tender, fragrant lotus root and a rich, savory broth.

Preparation
Wash the pork ribs and cut them into 3 cm long pieces; peel off the rough skin of the lotus root, cut into chunks, and wash; wash the ginger and cut it in half.
Blanching
Add an appropriate amount of water to a pot along with half a piece of ginger, scallions, and cooking wine. Once boiling, add the pork ribs, blanch briefly, then remove and set aside.
Simmering
Place a wok over the heat, add water, then add the pork ribs, half a piece of ginger, and scallions. Bring to a boil over high heat, skim off all the foam, then reduce to low heat and simmer for about 20 minutes.
Transfer to clay pot
Pour the lotus root, pork ribs, and broth into a clay pot and simmer for another 30 minutes. Remove and discard the ginger and scallions, then season with fine salt, pepper, and MSG to taste.
