Lotus Seed Paste Potato Balls

Ingredients

potato (peeled and cut into thick slices) 350 g
sugar 2 tbsp
salt 1/4 tsp
butter 50 g
glutinous rice flour (add as needed based on moisture content) 100 g
lotus seed paste 400 g
shredded coconut 100 g

Instructions

1

Step 1

Peel the potatoes and cut them into thick slices. Steam in a steamer over high heat for about 30 minutes. Remove and mash into a smooth puree. Add all remaining ingredients A and knead until well combined. Add glutinous rice flour as needed based on the moisture content of the potatoes, adding just enough so that the dough no longer sticks to your hands. This forms the potato dough.

Step 2

Divide the potato dough from Step 1 evenly into small portions of about 35 g each. Wrap each portion with 25 g of lotus seed paste. With slightly wet hands, roll each piece into an oval shape, then coat it with shredded coconut. Repeat until all of the ingredients are used up.

Step 3

Heat oil in a pot to 150°C. Carefully lower the potato balls from Step 2 into the oil and fry until the surface turns golden brown. Remove and drain off the excess oil. Serve.
