Instructions
Preparing the aromatics
Cut the bacon into thin strips and dice the onion. Place both together in a 1-liter glass measuring cup, do not cover, and microwave on high for 2 minutes. Set aside.
Mixing the beef
Place the ground beef in a bowl. First add the water, salt, and light soy sauce, and stir in one direction until the mixture becomes sticky. Add the egg white and mix until evenly combined with the beef. Then add the remaining seasonings, bacon, and onion, and mix well. Refrigerate for at least 2 hours.
Preparing the slurry
Mix the slurry ingredients together. Just before cooking, peel and pit the mango, then cut it into cubes for immediate use.
Preheating
Preheat a griddle on high heat for 5 minutes.
Forming the patties
Wet your hands with water, then roll the beef mixture into 4 meatballs. Roll each ball in egg yolk, then place it in cornstarch. Once evenly coated, flatten with the palm of your hand into a patty. Make 4 patties in total.
Pan-frying
Add oil to the griddle and heat on high for 1 minute. Place the beef patties on the griddle, making sure they do not touch each other. Pan-fry on high heat for 2 minutes. (To prevent oil from splattering inside the oven, you may lightly cover with a paper plate, but do not cover completely.)
Flipping and adding the slurry
Flip the patties and pan-fry on high heat for another 1 minute. Stir the slurry and pour it onto the griddle. Add the mango cubes and cook on high heat for 1 minute.
Plating
Lift the patties out first and arrange them on a serving plate. Top with the mango. Stir the slurry and drizzle it over the patties before serving.
