Ingredients

Pigeon breast meat (diced) to taste
Shrimp meat (diced) to taste
Skinless walnuts (roasted, diced) to taste
Pine nuts (roasted, diced) to taste
Water chestnuts (diced) to taste
Shiitake mushrooms (diced) to taste
Wafer paper to taste
Breadcrumbs to taste
Refined salt to taste
Scallions (minced) to taste
Ginger (minced) to taste
Cooking wine to taste
Chicken powder to taste
Starch to taste
Egg wash to taste
Salad oil to taste

Instructions

Step 1

Roast the walnuts and pine nuts, then cut them into small dice.

Dice the pigeon breast, shrimp, water chestnuts, and shiitake mushrooms separately. Combine with the diced walnuts, diced pine nuts, minced scallion and ginger, refined salt, cooking wine, and chicken powder, then stir-fry until fragrant to make the filling.

Wrap the filling in wafer paper and roll into cylinders. Dust with starch, dip in egg wash, and coat with breadcrumbs. Deep-fry in hot oil until cooked through.
