Ingredients

cake flour (low-gluten flour) 220 g
baking powder 2 tsp
cocoa powder 10 g
unsalted butter, softened at room temperature 90 g
granulated sugar 80 g
eggs 2
milk 60 ml
vanilla extract a pinch
unsalted butter, for greasing the mold to taste

Instructions

1

Prepare the ingredients

Soften the butter at room temperature. Lightly grease the inside of the muffin mold. Sift the cake flour together with the baking powder. Preheat the oven to 180°C (350°F).

2

Cream the butter and add the eggs

Place the butter in a bowl and beat with a whisk until creamy. Add the granulated sugar and continue beating with the whisk until the mixture turns pale and fluffy. Lightly beat the eggs and gradually add them to the bowl, mixing well after each addition. Add the vanilla extract.

3

Add the milk and the dry ingredients

Add the milk and the sifted dry ingredients alternately in three batches, gently folding with a spatula after each addition.

4

Fill the molds and bake

Divide the batter into two portions. Sift the cocoa powder into one portion and gently fold it in with a spatula. Fill the muffin cups by alternating the plain and chocolate batters in three additions, filling each cup to about 70% full. Swirl a few times with a bamboo skewer to create a marble pattern. Bake in the oven at 180°C (350°F) for 20 to 25 minutes.
