Milk Caramel Sauce
A rich, thick caramel milk sauce originating in Latin America.
Ingredients
milk
2 pints (1 liter)
sugar
12 ounces (375 ml)
baking soda
1/4 tsp (1 ml)
vanilla extract
1/2 tsp (2 ml)
Instructions
1
Step 1
Put the milk, sugar, and baking soda into a heavy-bottomed saucepan. Place it over medium heat. Do not stir; slowly bring the mixture to a boil.
2
Step 2
The mixture will foam as it nears boiling. Quickly remove it from the heat before it boils over, then stir.
3
Step 3
Lower the heat, return the saucepan to the stove, and simmer for about 45 to 60 minutes, stirring frequently with a wooden spoon. The mixture will gradually caramelize.
4
Step 4
When the mixture becomes a rich golden brown and thickens but remains pourable, remove it from the heat and stir in the vanilla extract.
5
Step 5
Allow the sauce to cool thoroughly.
