Prepare the millet
Rinse the millet thoroughly under cold water until the water runs clear. This removes any dust or debris.
Cook the congee
Transfer the rinsed millet to a slow cooker or heavy pot. Add water and set to cook on low overnight (8-10 hours) or on high for 2-3 hours until the grains have completely broken down into a creamy porridge.
Finish and rest
Stir in the black sesame powder and salt until evenly distributed. Cover and let it rest for 10 minutes to allow the sesame aroma to fully develop. The congee will deepen in color as the sesame infuses.
