Mini Banana Muffins
Soft, mini cup-shaped treat made with banana puree and walnuts.
Ingredients
all-purpose flour
250 g (approx 2 cups)
baking powder
1 tsp
baking soda
1/2 tsp
nutmeg powder
1/2 tsp

bananas (medium, approx 200g each with skin)

Mix Dry Ingredients
Sift all-purpose flour together with baking powder, baking soda, nutmeg powder, cinnamon powder, and salt, then transfer to a mixing bowl.

Prepare Bananas
Peel bananas, mash into a puree, mix in lemon juice until well combined.

Make Batter
Beat shelled eggs, add sugar and fresh milk, then mix into the banana puree until smooth. Pour the mixture over the sifted flour, stir a few times, add toasted walnuts, and stir quickly just until combined to avoid overmixing.

Bake
Spray mini muffin cups with oil, fill with batter to about 3/4 full, place in a preheated oven, and bake at 185°C for approximately 15 minutes.
