Ingredients

butter (diced) 90 g
light brown cane sugar 90 g
corn syrup 1 tbsp
cake flour 175 g
powdered sugar 150 g
lemon juice 4 to 5 tsp
red food coloring to taste
shredded almond paste 90 g
black candied cherries (halved) 8
candied angelica (chopped) 1

Instructions

1

Step 1

Preheat the oven to 180°C (350°F). Grease 2 baking sheets.

2

Step 2

Cream the butter and sugar in a bowl. Add the corn syrup. Add the flour and mix until a smooth dough forms.

3

Step 3

Turn the dough out onto a lightly floured work surface and cut into 6 equal pieces. Roll each piece into a ball, place on the baking sheets spaced slightly apart, and gently flatten.

4

Step 4

Bake for about 12 minutes, until the mini pizzas turn golden. Let sit on the baking sheet for 3 minutes, then transfer to a cooling rack to cool completely.

5

Step 5

Make the topping: Place the powdered sugar in a bowl and stir in enough lemon juice to make a thick, spoonable icing. Add red food coloring until the mixture turns deep red.

6

Step 6

Spread the icing on the mini pizzas, leaving a 5 mm border around the edge. Place half a candied cherry in the center. Sprinkle with shredded almonds and chopped candied angelica so they look like little pizzas topped with cheese, tomato, and herbs.
