Minnan Sheng Guo (Fujian Peanut Brittle)

A traditional Fujian cold dish: crispy fried peanuts tossed with sugar powder, five-spice powder, and Sichuan pepper salt—sweet, crunchy, and aromatic.

Minnan Sheng Guo (Fujian Peanut Brittle)

Ingredients

Peanuts (pour boiling water over briefly and remove skins) 500 g
Powdered sugar 200 g
Frozen lard 100 g
Five-spice powder 25 g
Sichuan pepper salt 2.5 g
Raw oil (for frying) 1000 g

Instructions

Prepare the peanuts

Place the peanuts in a bowl, pour boiling water over them to soak briefly, remove the skins, and set aside.

Fry

Heat a half-pot of raw oil. When the oil reaches about 40% hot, add the peanuts and fry over low heat until crisp and pale yellow, then remove and let cool naturally.

Mix well

Once the peanuts have cooled, first toss them with the frozen lard, then combine the powdered sugar, five-spice powder, and Sichuan pepper salt together and add to the peanuts. Mix thoroughly so that a thin layer of powdery mixture coats the peanuts.
