Mixed Fish Fritters
Fish batter blended with herbs, garlic, and onion, deep-fried as a snack.

flour (sifted)
60 g
baking powder
1/2 bag
egg (beaten)

dry white wine
3 tbsp
flat-leaf parsley (chopped)
2 tbsp
garlic (crushed)
1 clove
shallot (grated)

small fish for frying
200 g
salt
to taste

Make the batter
In a large bowl, combine the sifted flour, baking powder, a pinch of salt, and a little pepper. Make a well in the center and pour in the egg and wine. Stir with a spatula, then add the parsley, garlic, shallot, and fish. Cover with a cloth and refrigerate for 30 minutes.

Fry the fritters
Heat about 3 cm of olive oil in a frying pan. Drop in a level spoonful of batter and fry in batches. Use a slotted spoon to keep the fritters separated and fry for about 2 minutes, until golden. Drain on paper towels and serve immediately.
