Ingredients

whole hazelnuts ½ cup
sunflower seeds 8 tbsp
dried apricots (cut into small pieces) 1 cup
unsweetened puffed rice cereal 10 cups
raisins 1 cup
coconut flakes 2/3 cup

Instructions

1

Toast the hazelnuts

Place the hazelnuts in a skillet and toast over medium-low heat. Stir with a wooden spoon and cook for 3 minutes or until they begin to turn golden.

2

Toast the sunflower seeds

Pour the hazelnuts into a bowl to cool. Place the sunflower seeds in the skillet and toast for 2 minutes. They should turn golden but not burn.

3

Process the hazelnuts

Let the sunflower seeds cool. Place the cooled hazelnuts in a small plastic bag. Fold over the open end and hold it with one hand. Use a rolling pin in the other hand to crush the hazelnuts until they break into small pieces. Then cut the dried apricots into small pieces.

4

Mix

Place the puffed rice cereal in a large mixing bowl. Add the apricots, hazelnuts, seeds, raisins, and coconut, and gently mix by hand.
