Mock Roast Goose

A traditional Cantonese vegetarian dish made by wrapping glutinous rice, red dates, and other fillings in tofu skin and deep-frying until golden brown. The finished pieces resemble roast goose in appearance.

Mock Roast Goose

Ingredients

Tofu skin 2
Glutinous rice (washed, soaked for 1 hour and drained) 500 g
Sugar 200 g
Peanut oil (for frying) 250 g
Red dates 100 g
Money cookies 100 g
Winter melon candy 100 g
Sesame oil (for mixing filling) to taste

Instructions

Soak the glutinous rice

Wash the glutinous rice thoroughly, soak for 1 hour, then drain off the water.

Steam the glutinous rice

Bring water to a boil in a pot, place the glutinous rice in to steam for 1 hour until it becomes sticky rice, then remove and set aside.

Mix the filling

Combine the red dates, money cookies, winter melon candy, sugar, sesame, sesame oil and sticky rice, and mix evenly to form the filling.

Wrap and shape

Lay a sheet of tofu skin flat on the cutting board, place the mixed filling on top, and roll it up into a long strip.

Deep fry

Place the rolled tofu skin rolls in a pot of hot oil and deep fry until cooked through.

Plate and serve

Remove from the oil, cut into squares, arrange on a plate and serve.
