Monster Fudge Nut Cookies

Ingredients

semi-sweet chocolate (chopped) 12 oz
unsalted butter (cut into small pieces) 6 tbsp (¾ cup)
all-purpose flour ⅔ cup
baking powder 1 tsp
salt ¼ tsp
large eggs 3
granulated sugar 1 cup
vanilla extract 1 tbsp
Hershey's mini semi-sweet chocolate chips 1 bag (12 oz)
coarsely chopped walnuts 1½ cup

Instructions

1

Preheat and Prepare

Position the rack in the center of the oven and preheat to 350°F (about 175°C). Grease two large baking sheets.

2

Melt the Chocolate and Butter

In the top of a double boiler, melt the chocolate and butter over barely simmering water, stirring occasionally until smooth. Remove the top pan and let the chocolate mixture cool.

3

Mix the Dry Ingredients

In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.

4

Beat the Eggs and Sugar

Using an electric mixer fitted with the whisk attachment, beat the eggs on medium speed until combined. Gradually add the sugar. Increase the speed to high and continue beating until thick and pale, about 5 minutes. Stir the vanilla into the chocolate mixture, then add the egg mixture and beat on medium speed until combined. Add the flour mixture on low speed, scraping down the sides of the bowl. Fold in the chocolate chips and nuts with a wooden spoon. Chill the dough for 10 minutes.

5

Bake

Using a ¼-cup ice cream scoop or measuring cup, drop the dough onto the prepared baking sheets, spacing them about 2 inches apart. Bake one sheet at a time for 10 to 12 minutes, until the outside is set but the inside is still moist. Let cool on the baking sheet for 10 minutes, then transfer to a wire rack to cool completely.
