Mountain City Stream Minnow

A traditional steamed fish dish from the Longxi region of Fujian, made with wild creek minnow (Xiwei) caught in the Jiulong River and prepared by steaming until the flesh is tender.

Mountain City Stream Minnow

Ingredients

Stream minnow (live, gills removed, split open along the belly, innards removed and cleaned) 800 g
Lean pork (cut into 5 cm long shreds) 50 g
Rehydrated shiitake mushrooms 15 g
Fine salt 3 g
Scallion segments 15 g
MSG 2.5 g
Ginger slices 10 g
Superior stock 600 g
Shaoxing wine 3 g

Prep

Remove the gills from the stream minnow, make a single cut along the belly, remove the innards, rinse clean, and place into a soup bowl.

Plating

Cut the lean pork into 5 cm long shreds and arrange over the fish, then top with the shiitake mushrooms. Add the scallion segments, ginger slices, superior stock, fine salt, MSG, and Shaoxing wine. Cover, place in a steamer, and steam over high heat for 15 minutes. Remove and discard the scallions and ginger before serving.
