Moutai liquor 25 g

cooking wine 10 g

Step 1

Remove scales, gills, and fins from the mandarin fish, gut and clean. Score several cuts on both sides of the fish (spacing about 1.3 cm). Then marinate the fish with Moutai liquor, soy sauce, cooking wine, salt, MSG, ground pepper, scallion, ginger, and sesame oil for about two hours, turning the fish every half hour. If the fish dries out, add a little water.
