Step 1
Ingredients for mushroom chicken soup~~ Soak dried shiitake mushrooms in water. Blanch the half chicken in hot water to remove blood scum, slice the ginger, and crush the garlic cloves (this allows them to infuse more flavor when stewing with the chicken)~~
Step 2
Heat oil in a pan, stir-fry the sliced ginger and crushed garlic until fragrant, then add all the mushrooms and stir-fry together~~
Step 3
Once the mixture from step 2 releases its fragrant aroma, add the blanched half chicken and stir-fry together, then add rice wine to remove any gamey odor.
Step 4
Add the water used to soak the dried shiitake mushrooms, then pour in an appropriate amount of water. Once the mixture comes to a boil, transfer it to the inner pot of a rice cooker and add scallions.
Step 5
Add the scallions, then pour one cup of water into the outer pot of the rice cooker, and that's all you need to do~~
