Tender fresh cucumber (washed, sanitized, cut into rolling-cut pieces thicker on top and thinner on the bottom)

Prepare the Cucumber
Wash and sanitize the cucumber, then cut it into rolling-cut pieces that are thicker on top and thinner on the bottom. Add the refined salt and let it season for 3 minutes, then rinse once with cooled boiled water, squeeze out the excess moisture, and arrange in a serving plate.

Mix the Dressing and Toss
Combine the sesame oil, white vinegar, mustard sauce, and white pepper in a bowl and stir until evenly blended. Pour the dressing over the cucumber pieces and toss to combine. Serve immediately.
