Layer sliced potatoes, onions, and freshwater fish in a baking dish, then top with milk and cheese and bake until golden and bubbling.

medium potatoes (peeled, sliced 1/8 in. thick)

all-purpose flour

small onion (sliced into rings)

1⁄2 teaspoon
pepper
1⁄4 teaspoon
milk (divided)
3⁄4 cup
freshwater fish (trout, catfish or pike) or cod fillets)
11⁄2 pounds
grated Parmesan cheese (optional)
3 tablespoons
minced fresh parsley (or 2 teaspoons dried parsley flakes)
2 tablespoons
paprika
1/4 teaspoon

Step 1
Place potatoes in a saucepan; add water to cover and bring to a boil. Cook until almost tender; drain. Cut into 1/8-inch-thick slices and arrange in a greased 2-quart shallow baking dish. Sprinkle with flour. Top with onion; sprinkle with salt and pepper. Pour half of the milk over the potatoes. Place the fish on top and pour the remaining milk over the fish. Sprinkle with Parmesan cheese if desired.

Cover and bake at 375°F for 20-30 minutes, until the fish flakes easily with a fork. Sprinkle with parsley and paprika.
