Orange Juice and Orange Peel Veal Steak

Orange Juice and Orange Peel Veal Steak

Ingredients

veal steak (each cut into thirds) 5 slices
orange (one juiced, one for flesh slices and peel strips) 2
salt a pinch
sugar a pinch
wine a pinch
soy sauce a pinch
oil to taste

Marinate the veal steak

First, cut each piece of veal steak into thirds and marinate with a pinch of salt, sugar, wine, and soy sauce.

Prepare the oranges

Wash the oranges. Juice one and set aside. Cut the other into quarters, remove the flesh and slice it. Cut one-quarter of the peel into thin strips and set aside.

Stir-fry the veal steak

Heat a suitable amount of oil in a wok. Sear the veal steak for 3 to 5 minutes, then add the orange juice and orange flesh. Quickly stir-fry until the steak is fully cooked and has absorbed the orange juice, then plate.

Fry the orange peel

Clean the wok, add a little oil, and when the oil is hot, immediately flash-fry the orange peel strips for a moment, then quickly remove and sprinkle over the veal steak to serve.
