Nut and Apple Loaf

Nut and Apple Loaf

Ingredients

unsalted butter (softened to room temperature) 175 g
light brown sugar (soft) 140 g
strawberry jam 2 tbsp
eggs 2
cake flour (low-gluten flour) 140 g
baking powder 1 tbsp
ground cinnamon 1 tsp
mixed nuts (shelled and chopped) 100 g
dark chocolate (roughly chopped) 50 g
eating apples (peeled, cored and roughly chopped) 2
23x13 cm loaf pan (greased and floured) 1

Instructions

Cream butter, sugar, and jam

Place the butter, sugar, and strawberry jam in a stand mixer fitted with the paddle attachment and beat until light and fluffy.

Add the eggs

Add the eggs one at a time, beating well after each addition and scraping down the sides of the bowl with a rubber spatula between additions.

Add the dry ingredients

Sift the flour, baking powder, and cinnamon together into a separate bowl, then fold into the butter mixture.

Fold in the mix-ins

Using your hands, fold in the nuts, chocolate, and apple until evenly distributed. Cover and chill in the refrigerator for several hours, preferably overnight.

Preheat and bake

Preheat the oven to 170°C (325°F) / Gas Mark 3. Pour the batter into the prepared loaf pan and smooth the surface with a spatula. Bake in the preheated oven for 50-60 minutes, or until brown and firm to the touch. A skewer inserted into the center should come out clean (a little melted chocolate is fine). Cool slightly in the pan, then turn out onto a wire rack to cool completely.
