Oil-Braised Shrimp
A classic Chinese dish featuring shrimp braised in a savory sauce until tender and infused with flavor.

Prep the shrimp
Trim the whiskers and remove the sand vein from the shrimp. Wash and drain. Slice open the back of each shrimp with a knife to help them absorb the flavor.
Prep aromatics and sauce
Shred the green onion and ginger. Mix cooking wine, light soy sauce, sugar, and a small amount of water to make a sauce mixture.
Sear the shrimp
Heat oil in a pan over medium heat. Add the shrimp and fry until they turn red, then remove and drain the excess oil.
Braise the shrimp
Leave a little oil in the pan. Add the shredded green onion and ginger and stir-fry until fragrant. Pour in the sauce mixture from step 2. When the sauce boils, add the shrimp. Cover and simmer over low heat for 5 minutes to let the flavor soak in.
Reduce and serve
Turn to high heat to reduce the sauce until only a little liquid remains. Turn off the heat, plate the shrimp, and pour the remaining sauce over them.
