Ingredients

Italian ciabatta bread 1
Mashed potato 25 g
Oil-cured sardine 50 g
Mixed herbs (including dill, Italian parsley, anise, tarragon, etc.) 2 g
Walnut oil 3 g

Preparation

Oil-cured sardines: Cut the sardines into three fillets. Add red chili and garlic to olive oil, heat over flame to release the aroma, keep the temperature at 60°C, then add the sardines. Once the sardines are heated through, let them cool together with the olive oil. Mashed potatoes: Boil the potatoes in salted water until soft, peel and mash them, then mix in butter, milk, walnut oil, and salt until evenly combined.

Assembly

Cut a slit in the bread, spread the mashed potato on it, place the oil-cured sardines on top, lightly sprinkle with a little salt, add the mixed herbs on top, drizzle with walnut oil, then close the sandwich. You can also sprinkle some pink pepper.
