Ingredients

Fresh termite mushrooms (remove dirt, wash, slice, air-dry moisture) 1000 g
Rapeseed oil 250 g
Shallots 200 g
Sichuan peppercorns 10 g
Dried red chilies (cut into small segments) 25 g
Star anise 15 g

Instructions

1

Step 1

Remove dirt from the fresh termite mushrooms, wash them, slice diagonally along the stem, and air-dry excess moisture. Cut the dried red chilies into 0.2 cm long small segments.

Step 2

Heat a pan over medium-high heat, bring the rapeseed oil to medium temperature, add the shallots to fry the oil to remove the raw rapeseed oil flavor. Add the Sichuan peppercorns, dried red chili segments, and star anise, fry briefly, taking care not to burn them. Add the termite mushrooms and fry slowly until all moisture in the mushrooms has evaporated, the mushrooms turn yellow but not crispy, then done.
