Ingredients
Instructions
Step 1
Wash the spinach and set aside.
Step 2
Blanch in a pot of boiling water until slightly soft.
Step 3
Measure out an appropriate amount of flour and one egg, and set aside.
Step 4
Lightly squeeze excess water from the spinach, then add it to the flour along with one egg and knead into a dough. No extra water is needed — the moisture from the spinach is just right.
Step 5
Knead into a smooth dough and let it rest for 30 minutes, kneading it a few times in between.
Step 6
Take a portion of the dough and roll it out.
Step 7
Cut into noodle strips and set aside.
Step 8
Drop the noodles into a pot of boiling water and boil through three rounds of water, then remove and drain.
Step 9
Top the noodles with chopped scallion and chili powder. Heat oil in a pan until very hot and pour it over to release the aroma, then season with salt, vinegar, and light soy sauce. Toss well to combine and serve.
