Old Beijing Fried Sauce Noodles
Stir-fry ground pork and egg with sweet bean sauce and fermented soybean paste to make the fried sauce, then pour it over the cooked noodles.

Noodles (place in boiling water, add a pinch of salt, cook for about 10 minutes until done, transfer to serving bowl)

Step 1
Place the noodles in a pot of boiling water, add a pinch of salt, cook for about 10 minutes until done, transfer to a serving bowl, then pour in the boiling fresh broth.

Heat a wok over high heat, add an appropriate amount of base oil, first beat the egg, pour it into the wok and cook until set then set aside, next add the ground pork and stir-fry until it changes color, then add the seasonings and the cooked egg.

Stir-fry quickly over high heat until the flavors are absorbed, when the sauce thickens, remove from the wok and serve in the noodle bowl.
