Ingredients

Baby Carrots 1 handful
Mixed breakfast vegetables (e.g., spinach, mushrooms, bell peppers) 1 cup
Olive Oil 1 tbsp
Salt to taste
Black Pepper to taste

Instructions

Sauté the Carrots

Warm a skillet over medium heat and swirl in the olive oil. Add the baby carrots and sauté them for about 2 minutes to soften slightly.

Add Remaining Vegetables

Toss in the rest of your chopped vegetables. Stir everything together and cook for another 2 to 3 minutes until just tender and vibrant.
