Onion Bread
American-style onion bread made with fresh onions.

Instructions
Mix liquids
In a large bowl, combine the milk, sugar, salt, and oil. Cool until lukewarm.
Activate yeast
Dissolve the yeast in the warm water and add it to the milk mixture. Stir in the onion.
Knead dough
Beat vigorously for 10 minutes, gradually adding about 4 cups of flour, until the dough begins to pull away from the sides of the bowl. Turn out onto a lightly floured surface and knead for 8-10 minutes until smooth and elastic.
First rise
Place the dough in an oiled large bowl, turning to coat all sides with oil. Cover with plastic wrap and let rise in a warm, draft-free place until doubled in volume, about 45 minutes.
Shape and second rise
Punch down the dough, divide in half, shape into loaves, and place in oiled loaf pans. Cover with a tea towel and let rise until doubled, about 20 minutes.
Bake
Preheat the oven to 350°F and bake for 1 hour. Transfer to a cooling rack to cool.
