Ingredients

Egg whites 4 oz (125g)
Sugar (for syrup) 4 oz (125g)
Water (for syrup) 2.5 oz (70g)
Gelatin 0.33 oz (9g)
Orange peel (grated) 1.75 teaspoon (4g)
Orange liqueur 1.33 oz (40g)
Cream cheese 8 oz (250g)
Orange juice (strained) 2 oz (60g)
light cream 11 oz (350g)

Instructions

Step 1

Make the meringue: Whip the egg whites to soft peaks. Cook the sugar and water into a syrup, heating to 240°F (115°C). Gradually add the hot syrup to the egg whites, continuing to whip until cooled. Set aside.

Soften the gelatin in cold water.

Heat the orange liqueur, add the gelatin and stir until dissolved.

Using the paddle attachment in a mixer, mix the cream cheese with the orange zest and a little orange juice until smooth.

Add the gelatin liquid and the remaining orange juice, stirring until smooth.

Whip the heavy cream to soft peaks. Fold the meringue and the whipped cream alternately into the cheese mixture until smooth.

Fill into the mold and refrigerate.
