Pan-seared Sea Bass with Cream Sauce

Ingredients

Sea bass (washed, filleted with skin on, with two cuts made across the back) 1
Low-gluten flour to taste
Diced onion (peel off membrane, wash, and dice) 2 tbsp
Sliced shiitake mushrooms (wash and slice) 80 g
White wine (for marinating) a pinch
Salt (for marinating) a pinch
White pepper powder (for marinating) a pinch
Lemon juice (for marinating) a pinch
Butter (for sauce) 2 tbsp
White wine (for sauce) 150 ml
Heavy cream (for sauce) 200 g
Eggplant strips (trim ends, wash, cut into strips, coat with low-gluten flour, deep-fry at 180°C until crispy, then drain) to taste
Diced red bell pepper (remove seeds, wash, blanch until cooked, then dice) a pinch
Broccoli (wash, break into small florets, blanch in boiling water until cooked) 5

Instructions

1

Prepare the fish

Wash the sea bass, fillet it with the skin on, and make two cuts across the back. Marinate with seasoning A for 10 minutes, then remove the sea bass and coat it with low-gluten flour.

2

Pan-fry the fish

Heat olive oil (amount not included above) in a pan, then place the sea bass in and pan-fry over medium heat until golden brown. Remove and place in a baking tray (skin side up).

3

Bake the fish

Place the baking tray into the oven with top heat at 180°C and bottom heat at 160°C and bake for about 12 minutes until cooked through. Remove and plate.

4

Make the sauce

Take a pot, melt the butter, then sauté the diced onion over medium heat until fragrant. Add the sliced shiitake mushrooms and continue to sauté until soft.

5

Finish the sauce

Add the white wine, heavy cream, and salt from seasoning B to taste. Continue to simmer for about 2 minutes so the mushroom slices absorb the flavors. Remove and pour over the sea bass baked in step 3. Garnish with the decorative ingredients to finish.
