Pan-Stewed Pork Tenderloin Slices
Korean-style pan-fried pork tenderloin: pork tenderloin slices are scored in a crosshatch pattern, pan-fried until golden, then braised with added ingredients.

Instructions
Marinate
Wash the pork tenderloin and remove the fascia. Use a knife to cut it into large slices 10 cm long and 7 cm wide, then make a cross-hatch cut across the surface. Place the slices in a ceramic bowl along with the minced ginger and scallion, cooking wine, 10 g sesame oil, salt, and MSG. Mix well, marinate for 5 minutes, then stir in the beaten egg until evenly combined.
Pan-fry
Heat a wok and add a little sesame oil. Arrange the pork slices neatly in the pan and pan-sear over low heat for 1 minute until slightly collapsed, then flip and fry for another 1 minute. Transfer the slices to a strainer to drain off excess oil.
Braise and finish
Heat the wok again with sesame oil. When the oil is about half-hot (50% heat), add scallion and ginger and stir-fry until fragrant. Add the eggs, MSG, salt, and cooking wine, then place the pan-fried pork slices into the wok and simmer-braise for 2 minutes. Top with the garlic chive segments and sprinkle with the roasted sesame powder before serving.
