Paper-Wrapped Prawns

Large prawns are lightly fried and coated with a starch glaze, then wrapped in cellophane paper. Hot prawn oil is poured over the filling and the package is tied securely before being deep-fried again until the oil bubbles inside the wrapper. Serve immediately.

Paper-Wrapped Prawns

Ingredients

Large prawns (prepared the same as grilled prawns) 1.5 kg
Glassine paper (for wrapping) 1 large
Egg whites 120 g
Raw oil (about 100 g actually used) 900 g
Shrimp oil (preheat first) 150 g
Cooking wine 15 g
MSG 5 g
Scallion and ginger juice 50 g
Wet cornstarch 6 g
Chicken stock 25 g
Salt (specific grams not listed, mentioned in the steps) to taste

Prepare the prawns

Prepare the prawns the same way as for grilled prawns.

Fry the prawns

Heat the raw oil in a wok until 50% hot, add the prawns and fry until cooked through, then remove.

Make the sauce and wrap

In the original hot wok, pour in the cooking wine, add the MSG, salt, and chicken stock, stir well, and bring to a boil. Thicken with wet cornstarch, add the prawns, toss a few times, then remove. Place the prawns into the glassine paper, pour the preheated shrimp oil over them, and tie the four corners of the paper tightly with red and green ribbons.

Refry to finish

Place the paper-wrapped prawns into raw oil heated to 60-70% hot. Fry until the shrimp oil inside the paper moves, then remove. Serve immediately.
